Ingredients
  

  • 4 boneless skinless chicken breasts (about 1.5 lbs)
  • 1 can 14.5 oz fire-roasted diced tomatoes
  • 1 can 15 oz black beans, rinsed and drained
  • 4 cups low-sodium chicken broth
  • 2 bell peppers chopped (any color)
  • 1 cup corn kernels fresh or frozen
  • 2 tsp ground cumin
  • 2 tsp chili powder

Method
 

  1. Prepare the ingredients by chopping the bell peppers and mincing garlic if desired.
  2. Layer the chicken breasts in the slow cooker; top with diced tomatoes, black beans, corn, and bell peppers.
  3. Sprinkle cumin and chili powder over the layers; pour in chicken broth until all ingredients are submerged.
  4. Cover and cook on low for 6 hours or high for 3 hours.
  5. Once cooked, shred the chicken with two forks and return it to the soup.
  6. Serve in bowls and garnish with tortilla strips, avocado slices, cilantro, or lime juice.
