Ingredients
  

  • 1 pound boneless skinless chicken thighs
  • 1 inch fresh ginger minced
  • 4 garlic cloves minced
  • 4 cups low-sodium chicken broth
  • 2 tablespoons low-sodium soy sauce
  • 8 ounces ramen noodles
  • 2 green onions sliced
  • 2 soft-boiled eggs
  • torn nori sheets

Method
 

  1. Prepare ingredients by mincing garlic and ginger.
  2. Brown chicken thighs in a skillet over medium heat for about 3 minutes per side (optional).
  3. In the slow cooker, combine chicken, garlic, ginger, broth, soy sauce, and any other desired spices.
  4. Cover and cook on low for 6 hours or high for 3 hours.
  5. About 15 minutes before serving, add ramen noodles to the slow cooker.
  6. Serve hot with green onions, soft-boiled eggs, nori sheets, or additional toppings.
