Ingredients
  

  • 2 lbs beef chuck roast cut into bite-sized pieces
  • 8 oz fresh mushrooms sliced
  • 1 medium onion finely chopped
  • 3 cloves garlic minced
  • 2 cups low-sodium beef broth
  • 1 cup full-fat sour cream
  • 2 tbsp Worcestershire sauce
  • 1 tbsp Dijon mustard
  • Salt and pepper to taste

Method
 

  1. Season the beef chunks with salt and pepper.
  2. In a skillet over medium heat, sauté onions until translucent; add minced garlic and cook for another minute.
  3. Brown the seasoned beef in the same skillet until golden on all sides.
  4. Transfer the beef, onions, garlic, and sliced mushrooms to a slow cooker.
  5. In a separate bowl, whisk together beef broth, Worcestershire sauce, Dijon mustard, and additional seasonings; pour over the meat mixture.
  6. Cook on low for 6-8 hours or on high for 3-4 hours until beef is tender.
  7. Serve hot over egg noodles or rice with a drizzle of sour cream.
