Ingredients
  

  • 2.5 pounds beef chuck roast
  • 1 packet onion soup mix
  • 1 tablespoon vegetable oil
  • 1 packet brown gravy mix
  • ¼ cup red wine vinegar
  • mashed potatoes store bought or homemade
  • Garlic Texas Toast
  • chopped fresh parsley or sliced green onions for garnish, optional

Equipment

  • Crockpot
  • cast iron skillet

Method
 

  1. Cut the beef chuck roast into 3-4 large pieces and pat dry.
  2. Sprinkle a pinch of the onion soup mix over all sides of the roast pieces.
  3. Heat a cast iron skillet over medium-high heat and add vegetable oil.
  4. Add roast pieces and sear for 2-3 minutes without disturbing, then flip and sear the other side.
  5. Spray the inside of a crockpot with non-stick spray.
  6. Place seared roast pieces in the bottom of the crockpot in a single layer.
  7. Sprinkle remaining onion soup mix and brown gravy mix over all the beef.
  8. Pour in red wine vinegar.
  9. Cover and cook on low for 8 hours until the meat shreds easily.
  10. Shred the meat with two forks and mix it back with the gravy in the crockpot.
  11. Prepare mashed potatoes and garlic Texas toast according to package directions.
  12. Serve by placing garlic bread on a plate, top with mashed potatoes.
  13. Add shredded meat on top of the potatoes and drizzle with gravy.
  14. Garnish with chopped parsley or green onions and serve with a vegetable.
