Ingredients
  

  • 1 lb large shrimp peeled and deveined
  • 2 tbsp olive oil
  • 2 tbsp taco seasoning
  • 8 small corn tortillas
  • 1 cup shredded cabbage green and red mixed
  • Juice of 1 lime
  • ¼ cup chopped fresh cilantro
  • ½ cup sour cream or Greek yogurt
  • 2 tbsp chipotle sauce

Method
 

  1. Gather all ingredients on your countertop.
  2. In a bowl, combine shrimp with olive oil and taco seasoning; let marinate for about 15 minutes.
  3. Heat a skillet over medium-high heat; cook the marinated shrimp for about 2 minutes per side until pink and slightly charred.
  4. Meanwhile, warm tortillas in another skillet for about 30 seconds on each side.
  5. Assemble tacos by layering cabbage slaw and cooked shrimp on each tortilla. Drizzle with lime juice and top with cilantro.
  6. Mix sour cream (or yogurt) with chipotle sauce in a bowl; drizzle over assembled tacos.
