Ingredients
  

Salad Base
  • 1 lb shrimp peeled and deveined
  • 4 cups mixed greens such as arugula and spinach
  • 1 cup cherry tomatoes halved
  • 1 cucumber cucumber diced
  • 1 avocado avocado sliced
Dressing
  • 3 tbsp olive oil extra virgin
  • 2 tbsp lemon juice freshly squeezed
  • 1 tsp Dijon mustard
  • 1 clove garlic minced
  • to taste salt
  • to taste black pepper

Method
 

Prepare the Shrimp
  1. In a pot of boiling salted water, cook the shrimp for 2-3 minutes until they turn pink and opaque. Drain and set aside to cool.
Make the Dressing
  1. In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, minced garlic, salt, and pepper until well combined.
Assemble the Salad
  1. In a large mixing bowl, combine mixed greens, cherry tomatoes, cucumber, and avocado.
  2. Add the cooled shrimp and drizzle with the dressing. Toss gently to combine.
Serve
  1. Divide the salad among plates and serve immediately.
