Ingredients
  

  • 3 cups cooked jasmine rice preferably day-old
  • 1 cup shrimp peeled and deveined
  • 1 cup mixed vegetables peas, carrots, bell peppers
  • 2 large eggs
  • 3 tbsp soy sauce low-sodium recommended
  • 2 green onions chopped
  • 1 tbsp sesame oil
  • 3 cloves garlic minced

Method
 

  1. Gather all ingredients and chop the vegetables.
  2. Heat a large skillet or wok over medium-high heat; add sesame oil.
  3. Add shrimp and cook until pink (about 3 minutes), then remove from the pan.
  4. Scramble the eggs in the same pan until just set; remove and set aside.
  5. Stir-fry the mixed vegetables with the rice for about 5 minutes until heated through.
  6. Return shrimp and scrambled eggs to the pan; add soy sauce and garlic. Toss well to combine.
  7. Garnish with chopped green onions and serve hot.
