Ingredients
  

  • 1 cup green or brown lentils
  • 2 medium carrots diced
  • 2 celery sticks diced
  • 1 onion finely chopped
  • 4 garlic cloves minced
  • 4 cups vegetable broth
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil

Method
 

  1. Rinse lentils under cold water until clear.
  2. In a large pot over medium heat, heat olive oil. Sauté onions until translucent (about 5 minutes). Add minced garlic and cook for an additional minute.
  3. Stir in diced carrots and celery; cook for another 5 minutes.
  4. Add lentils and vegetable broth to the pot. Season with thyme, salt, and pepper. Bring to a boil then reduce heat to low.
  5. Cover and simmer for about 30 minutes until lentils are tender but not mushy, stirring occasionally.
  6. Taste and adjust seasoning before serving hot with crusty bread.
