Ingredients
  

For the Salmon
  • 4 fillets salmon skin-on or skinless
  • 2 tablespoons olive oil for grilling
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 1 teaspoon garlic powder
For the Mango Salsa
  • 1 cup mango diced
  • 1/2 cup red onion finely chopped
  • 1 medium jalapeño seeded and minced
  • 1/4 cup cilantro chopped
  • 1 lime juice freshly squeezed
  • 1/4 teaspoon salt to taste

Method
 

Prepare the Salsa
  1. In a mixing bowl, combine diced mango, red onion, jalapeño, cilantro, lime juice, and salt. Mix well and set aside.
Cook the Salmon
  1. Preheat the grill to medium-high heat.
  2. Brush the salmon fillets with olive oil and season with salt, black pepper, and garlic powder.
  3. Place the salmon on the grill, skin-side down, and cook for about 4-5 minutes per side, or until the salmon is cooked through and flakes easily with a fork.
Serve
  1. Remove the salmon from the grill and top each fillet with the fresh mango salsa. Serve immediately.
