Ingredients
  

  • 2 salmon fillets 6 oz each
  • 8 oz pasta spaghetti or fettuccine
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • 1 cup heavy cream
  • 2 tablespoons fresh lemon juice
  • 2 cups fresh spinach
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Method
 

  1. Prepare the pasta according to package instructions in salted boiling water until al dente (about 8-10 minutes). Drain and set aside.
  2. Season the salmon fillets with salt and pepper. Heat olive oil in a skillet over medium heat. Cook salmon skin-side down for 4-5 minutes on each side until golden brown and flaky. Remove and flake into bite-sized pieces.
  3. In the same skillet, sauté minced garlic for about one minute until fragrant. Add heavy cream and lemon juice, stirring to combine. Let simmer briefly before adding spinach until wilted.
  4. Toss the cooked pasta with the cream sauce and flaked salmon until well combined.
  5. Serve topped with grated Parmesan cheese and additional lemon zest if desired.
