Ingredients
  

Mixed Greens Salad
  • 8 cups mixed greens such as arugula, spinach, and romaine
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber sliced
  • 1 cup red onion thinly sliced
  • 1 cup feta cheese crumbled
  • 1/2 cup olive oil for dressing
  • 1/4 cup balsamic vinegar for dressing
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
Pasta Salad
  • 1 pound pasta cooked and cooled
  • 1 cup bell peppers diced
  • 1 cup black olives sliced
  • 1 cup mozzarella cheese cubed
  • 1/2 cup Italian dressing for flavor
Quinoa Salad
  • 2 cups quinoa cooked and cooled
  • 1 cup corn cooked
  • 1 cup black beans drained and rinsed
  • 1 cup cilantro chopped
  • 1/4 cup lime juice for dressing
  • 1/4 cup olive oil for dressing
  • 1 teaspoon cumin for flavor

Method
 

Mixed Greens Salad
  1. In a large mixing bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, and feta cheese.
  2. In a separate bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
  3. Drizzle the dressing over the salad and toss to combine.
Pasta Salad
  1. In a large bowl, combine cooked pasta, bell peppers, black olives, and mozzarella cheese.
  2. Pour Italian dressing over the pasta mixture and toss to coat evenly.
Quinoa Salad
  1. In a large bowl, mix cooked quinoa, corn, black beans, and cilantro.
  2. In a small bowl, whisk together lime juice, olive oil, and cumin.
  3. Pour the dressing over the quinoa salad and mix well.
