Ingredients
  

  • 2 lbs ripe tomatoes
  • 1 medium onion
  • 3-4 garlic cloves

  • 4 cups vegetable broth
  • Olive oil

Method
 

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Halve the tomatoes and place them cut-side up on the baking sheet. Drizzle with olive oil, salt, and pepper.
