Ingredients
  

For the Roasted Butternut Squash
  • 1 medium Butternut squash peeled, seeded, and cut into 1-inch cubes
  • 2 tablespoons Olive oil for roasting
  • to taste Salt
  • to taste Pepper
  • 1 teaspoon Ground cumin
For the Ground Turkey Filling
  • 1 pound Ground turkey
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 medium Bell pepper chopped
  • 1 teaspoon Chili powder adjust to taste
For Garnishing
  • to taste Fresh parsley or cilantro chopped
  • to taste Feta cheese or goat cheese optional, crumbled

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Prepare the butternut squash by peeling, seeding, and cutting it into 1-inch cubes.
  3. Toss the squash cubes in a large bowl with olive oil, salt, and pepper.
  4. Spread the seasoned squash onto a baking sheet in a single layer.
  5. Roast in the preheated oven for about 25-30 minutes, or until the squash is fork-tender and lightly browned.
Cooking the Filling
  1. Cook the ground turkey in a skillet over medium heat until browned, about 5-7 minutes.
  2. Combine the roasted butternut squash with the ground turkey in the skillet.
  3. Serve warm, garnished with fresh herbs and optional cheese.
