Ingredients
  

  • 1 bunch fresh broccolini about 250g
  • 2 tablespoons extra virgin olive oil
  • 4 garlic cloves minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Juice of 1 lemon
  • ¼ cup grated Parmesan cheese

Method
 

  1. Preheat your oven to 425°F (220°C).
  2. Rinse the broccolini under cold water and pat dry. Trim any tough ends.
  3. In a large bowl, toss the broccolini with olive oil, minced garlic, salt, and pepper until evenly coated.
  4. Spread the seasoned broccolini on a baking sheet in a single layer. Roast for 15-20 minutes until tender and crispy at the edges.
  5. Remove from the oven and squeeze fresh lemon juice over the top.
  6. Sprinkle with grated Parmesan cheese before serving.
