Ingredients
  

Wraps
  • 8 sheets Rice paper Available in Asian grocery stores
Fillings
  • 1 cup Cooked shrimp Peeled and deveined
  • 1 cup Julienned carrots
  • 1 cup Cucumber Julienned
  • 1 cup Red bell pepper Julienned
  • 1 cup Fresh herbs Mint and cilantro
Dipping Sauce
  • 3 tablespoons Peanut butter
  • 2 tablespoons Soy sauce
  • 1 tablespoon Honey
  • 1 tablespoon Rice vinegar
  • 1 teaspoon Sesame oil

Method
 

Prepare the Fillings
  1. Gather all the fillings and prepare them by cutting them into thin strips.
Soften the Rice Paper
  1. Fill a large bowl with warm water. Dip one rice paper sheet into the water for about 10-15 seconds until it softens.
Assemble the Wraps
  1. Place the softened rice paper on a plate. Add a small amount of each filling in the center of the rice paper.
  2. Fold the sides of the rice paper over the filling, then roll it tightly from the bottom to the top.
Make the Dipping Sauce
  1. In a small bowl, whisk together peanut butter, soy sauce, honey, rice vinegar, and sesame oil until smooth.
Serve
  1. Serve the rice paper wraps with the dipping sauce on the side.
