Ingredients
  

  • 8 oz flat rice noodles
  • 2 cups mixed vegetables bell peppers, carrots, broccoli
  • 1 cup protein chicken, tofu, or shrimp
  • 3 cloves garlic minced
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 1-2 tsp chili sauce to taste

Method
 

  1. Soak the rice noodles in warm water for 20-30 minutes until tender. Drain and set aside.
  2. Chop vegetables into bite-sized pieces while noodles soak.
  3. Heat sesame oil in a skillet over medium-high heat. Add protein and cook until golden brown.
  4. Stir in minced garlic and vegetables; stir-fry for about 3 minutes until veggies are tender but still crisp.
  5. Add soaked noodles, soy sauce, and chili sauce to the skillet; toss until well combined.
  6. Serve hot, garnished with sesame seeds or green onions if desired.
