Ingredients
  

Main Ingredients
  • 1 cup Long-grain rice Rinsed
  • 1 can Kidney beans Drained and rinsed
  • 1 cup Coconut milk
  • 1 cup Water
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 sprigs Thyme Fresh
  • 2 cloves Garlic Minced
  • 1 small Scallion Chopped
  • 1 teaspoon Allspice

Method
 

Cooking Instructions
  1. In a pot, combine the coconut milk, water, salt, black pepper, thyme, garlic, and scallion. Bring to a boil.
  2. Add the rinsed rice and kidney beans to the pot. Stir well to combine.
  3. Cover the pot and reduce the heat to low. Cook for about 20 minutes, or until the rice is tender and the liquid is absorbed.
  4. Remove from heat and let it sit covered for 5 minutes. Fluff with a fork before serving.

Notes

For added flavor, you can include a Scotch bonnet pepper while cooking, but remove it before serving.
