  • 1 can canned kidney beans rinsed
  • 1 cup cherry tomatoes sliced in half
  • 1 medium red onion finely diced
  • 1 cup corn kernels fresh, frozen, or canned
  • 1 cup bell peppers any color, diced
For the Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons lime juice fresh
  • 1 teaspoon cumin powder
  • 1 teaspoon chili powder adjust to taste
For Garnishing
  • 1/4 cup fresh cilantro chopped
  • 1 medium avocado sliced

Method
 

Preparation
  1. Rinse the canned beans under cold water in a strainer, ensuring they're clean and ready to absorb all those delightful flavors.
  2. Chop the fresh veggies! Dice ripe tomatoes, crisp bell peppers, and finely slice red onions.
  3. Mix together the rinsed beans and chopped veggies in a large mixing bowl.
  4. Whisk together lime juice, olive oil, cumin, salt, and pepper in a small bowl.
  5. Pour the dressing over the bean and veggie mixture. Toss everything until all ingredients are coated evenly.
  6. Chill the salad in the refrigerator for at least 30 minutes before serving.
  7. Garnish with fresh cilantro or avocado slices for an extra touch of freshness.
