Ingredients
  

  • 2 English cucumbers about 2 cups sliced
  • 1 tsp kosher salt
  • 3 tbsp rice vinegar
  • 1 tsp sugar
  • 2 cloves garlic minced
  • 1 tbsp sesame oil
  • ½ tsp red pepper flakes adjust to taste
  • 2 tbsp toasted sesame seeds

Method
 

  1. Wash and thinly slice the English cucumbers.
  2. Place cucumber slices in a bowl, sprinkle with kosher salt, and let sit for 15-20 minutes to draw out moisture.
  3. In another bowl, whisk together rice vinegar, sugar, minced garlic, sesame oil, and red pepper flakes until well combined.
  4. Drain excess moisture from the cucumbers and mix them with the dressing until fully coated.
  5. Sprinkle toasted sesame seeds on top before serving.
  6. Chill for about an hour if desired, then serve fresh.
