  • 2 large eggs
  • 3 tablespoons salted butter melted
  • 0.125 teaspoon salt
  • 1 tablespoon granulated sugar
  • 1 cup whole milk
  • 0.625 cup water plus extra for consistency
  • 2-3 teaspoons red food coloring
  • 1 teaspoon vanilla extract
Chocolate Whipped Cream
  • 1 cup heavy cream
  • 2 tablespoons granulated white sugar
  • 1 tablespoon cocoa powder
  • 1 teaspoon vanilla extract

Method
 

Crepe Preparation
  1. In a blender or food processor, mix together all the ingredients for the crepes until well combined.
  2. Pour the batter into a bowl, cover, and refrigerate for 30 minutes.
Chocolate Whipped Cream
  1. Chill the mixing bowl and whisk attachment for 15-30 minutes.
  2. Beat the heavy cream until it thickens, then add the sugar, cocoa powder, and vanilla extract. Beat until semi-firm peaks form.
  3. Cover the chocolate whipped cream and refrigerate until ready to use.
Cooking Crepes
  1. Heat a non-stick skillet on medium heat and pour ⅓ cup of crepe batter in the center, swirling to spread it evenly.
  2. Cook for 45 seconds to 1 minute, then flip and cook the other side for an additional 30-45 seconds. Remove from heat and transfer to a plate. Repeat with remaining batter.
Assembling Crepes
  1. To assemble, take one crepe, spoon chocolate whipped cream on one side, add sliced strawberries, and fold. Drizzle with chocolate sauce if desired.
