Ingredients
  

  • 8 oz mascarpone cheese
  • 1 cup fresh raspberries
  • 12 ladyfingers
  • 1 cup strong brewed coffee cooled
  • ½ cup granulated sugar
  • Cocoa powder for garnish

Method
 

  1. Brew strong coffee and let it cool.
  2. In a mixing bowl, combine mascarpone cheese and sugar; mix until smooth.
  3. Quickly dip each ladyfinger in the cooled coffee and layer them in a serving dish.
  4. Spread half of the mascarpone mixture over the ladyfingers and add half of the raspberries on top.

  6. Cover and refrigerate for at least 4 hours or overnight.
  7. Before serving, dust cocoa powder over the top.
