Ingredients
  

  • 1 cup quinoa
  • 1 cup cherry tomatoes halved
  • 1 medium cucumber diced
  • 1 small red onion thinly sliced
  • 1/2 cup feta cheese crumbled (or vegan feta)
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 1/4 cup fresh parsley or mint chopped
  • Salt and pepper to taste

Method
 

  1. Rinse quinoa under cold water using a fine-mesh strainer.
  2. Cook quinoa in a medium saucepan with 2 cups of water; bring to a boil, then reduce heat and simmer covered for 15 minutes until water is absorbed.
  3. Fluff cooked quinoa with a fork and let it cool in a large bowl.
  4. While cooling, chop cherry tomatoes, cucumber, red onion, and fresh herbs into bite-sized pieces.
  5. Once cool, combine the chopped vegetables and crumbled feta cheese with the quinoa.
  6. Drizzle olive oil and lemon juice over the mixture; season with salt and pepper before tossing gently to combine.
