Ingredients
  

Salad Base
  • 1 cup quinoa rinsed
  • 1 cup edamame shelled and cooked
  • 1 medium cucumber diced
  • 1 medium avocado diced
  • 1/4 cup red onion finely chopped
  • 1/4 cup fresh cilantro chopped
Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons lime juice freshly squeezed
  • 1 teaspoon honey optional
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste

Method
 

Prepare Quinoa
  1. In a medium saucepan, combine quinoa and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed. Remove from heat and let it sit covered for 5 minutes.
Mix Salad
  1. In a large mixing bowl, combine cooked quinoa, edamame, cucumber, avocado, red onion, and cilantro.
Prepare Dressing
  1. In a small bowl, whisk together olive oil, lime juice, honey, salt, and black pepper.
Combine
  1. Pour the dressing over the salad and toss gently to combine. Adjust seasoning if necessary.
Serve
  1. Serve immediately or refrigerate for 30 minutes to let flavors meld.
