Ingredients
  

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp salt
  • ½ cup unsalted butter softened
  • 1 cup brown sugar packed
  • ½ cup granulated sugar
  • 1 large egg
  • 1 cup canned pumpkin puree

Method
 

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a mixing bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, cream the softened butter with brown sugar and granulated sugar until light and fluffy.
  4. Beat in the egg, then fold in the pumpkin puree until well combined.
  5. Gradually mix the dry ingredients with the wet mixture until just combined.
  6. Drop rounded tablespoons of dough onto prepared baking sheets, spacing them two inches apart.
  7. Bake for 12-15 minutes or until edges are lightly golden. Let cool slightly before enjoying.
