Ingredients
  

  • 3/4 cup half and half
  • 1/2 cup pumpkin puree
  • 4 large eggs
  • 2 1/2 Tbsp packed light-brown sugar
  • 1 1/2 tsp vanilla extract
  • 1 1/4 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/8 tsp cloves
  • 9 slices hearty white bread (1-inch)
  • Butter for griddle

Method
 

  1. Preheat oven to 225 degrees and an electric griddle to 350 degrees (or a non-stick skillet over medium heat).
  2. In a shallow dish, whisk together pumpkin, eggs, brown sugar, vanilla, cinnamon, nutmeg, ginger, and cloves until well combined. Pour in half and half and whisk until well blended.
  3. Dip bread into the egg mixture allowing it to soak in, then turn and soak the opposite side.
  4. Butter the griddle area where you'll place the slice of French toast, then top with the soaked French toast.
  5. Cook until golden brown on the bottom for several minutes, then lift, butter the griddle again, and flip the French toast to the opposite side to cook until golden brown.
  6. Transfer slices to the oven on the oven rack and keep warm for up to 10 minutes.
  7. Serve warm with maple syrup if desired.
