Ingredients
  

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter melted
  • ½ cup granulated sugar divided
  • 1 cup canned pumpkin puree
  • 8 oz cream cheese softened
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 tsp pumpkin spice blend

Method
 

  1. 1. Preheat oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper.
  2. 2. In a bowl, mix graham cracker crumbs, melted butter, and ¼ cup sugar until combined. Press into the bottom of the pan for the crust.
  3. 3. In another bowl, beat cream cheese until smooth. Gradually add remaining sugar, then mix in eggs one at a time.
  4. 4. Stir in pumpkin puree, vanilla extract, and pumpkin spice blend until smooth.
  5. 5. Pour filling over the crust and bake for 30-35 minutes or until edges are set but center is slightly jiggly.
  6. 6. Cool completely before refrigerating for at least two hours or overnight. Slice into squares and serve.
