Method
- Preheat your oven to 325°F (160°C) and prepare a baking dish by placing it on a rimmed baking sheet.
- In a medium bowl, whisk together pumpkin puree, heavy cream, sugar, egg yolks, vanilla extract, cinnamon, and nutmeg until smooth.
- Pour the mixture evenly into ramekins and place them in the baking dish.
- Fill the baking dish with hot water halfway up the sides of the ramekins and bake for 30-35 minutes until set but still slightly jiggly in the center.
- Allow to cool in the water bath before transferring to the refrigerator for at least two hours.
- Before serving, sprinkle sugar on top of each brulee and caramelize using a kitchen torch or broiler until golden brown.

For an even caramel crust, use superfine sugar.
