Ingredients
  

  • 4 medium Russet potatoes peeled and grated
  • 1 medium onion finely grated
  • 2 large eggs
  • ½ cup all-purpose flour or gluten-free alternative
  • 1 tsp salt
  • ½ tsp black pepper
  • ¼ cup vegetable oil for frying

Method
 

  1. Peel and grate the potatoes using a box grater or food processor. Squeeze out excess moisture with a clean kitchen towel.
  2. In a large bowl, mix the grated potatoes, grated onion, eggs, flour, salt, and pepper until combined into a thick batter.
  3. Heat vegetable oil in a frying pan over medium-high heat.
  4. Spoon dollops of the potato mixture into the hot oil, flattening slightly with a spatula. Fry each side for about 3-4 minutes until golden brown and crispy.
  5. Remove from the pan and place on paper towels to drain excess oil.
  6. Serve warm with sour cream or applesauce.
