Ingredients
  

  • 3-4 boneless skinless chicken breasts about 1.5 lbs
  • 2 cups potato chips your favorite flavor
  • 2 large eggs
  • 1 cup all-purpose flour
  • 1 tsp garlic powder
  • Salt and pepper to taste

Method
 

  1. Preheat your oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. Crush potato chips in a ziplock bag until you have small pieces (not dust).
  3. In one bowl, whisk eggs until frothy. In another bowl, mix flour with salt, pepper, and garlic powder.
  4. Dredge each chicken breast in flour, dip into the egg mixture, then roll in crushed potato chips until fully coated.
  5. Place the coated chicken in the prepared baking dish and bake for 25-30 minutes or until golden brown.
  6. Serve hot with your choice of dipping sauce.
