Ingredients
  

  • 2 lbs chuck roast cut into bite-sized pieces
  • 4 cups low-sodium beef broth
  • 2 medium carrots diced
  • 2 medium Yukon Gold potatoes diced
  • 1 medium onion finely chopped
  • 3 cloves garlic minced
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil

Method
 

  1. Heat olive oil in a large pot over medium-high heat. Brown the chuck roast pieces until seared on all sides; remove and set aside.
  2. In the same pot, sauté onion and garlic until fragrant and translucent.
  3. Return the beef to the pot and add beef broth, thyme, salt, and pepper. Scrape up any brown bits from the bottom for added flavor.
  4. Add carrots and potatoes; bring to a gentle boil then reduce heat to low.
  5. Cover and simmer for about 2 hours or until the beef is fork-tender.
  6. Serve hot with optional fresh parsley garnish.
