- Heat olive oil in a large pot over medium-high heat. Brown the chuck roast pieces until seared on all sides; remove and set aside.
- In the same pot, sauté onion and garlic until fragrant and translucent.
- Return the beef to the pot and add beef broth, thyme, salt, and pepper. Scrape up any brown bits from the bottom for added flavor.
- Add carrots and potatoes; bring to a gentle boil then reduce heat to low.
- Cover and simmer for about 2 hours or until the beef is fork-tender.
- Serve hot with optional fresh parsley garnish.
