Ingredients
  

Protein
  • 1 lb Chicken Breast Boneless, skinless
  • 1 can Chickpeas Drained and rinsed
Grains
  • 2 cups Quinoa Rinsed
  • 2 cups Brown Rice Rinsed
Vegetables
  • 2 cups Broccoli Chopped
  • 1 cup Carrots Sliced
  • 1 cup Bell Peppers Chopped
Healthy Fats
  • 1 avocado Avocado Sliced
  • 2 tbsp Olive Oil Extra virgin
Spices and Seasonings
  • 1 tsp Garlic Powder
  • 1 tsp Paprika
  • 1 tsp Salt To taste
  • 1 tsp Black Pepper To taste

Method
 

Cook Grains
  1. In a large pot, bring 4 cups of water to a boil. Add quinoa and brown rice, reduce heat, cover, and simmer for 15-20 minutes until cooked.
Prepare Protein
  1. In a skillet, heat olive oil over medium heat. Season chicken breast with garlic powder, paprika, salt, and pepper. Cook for 6-7 minutes on each side until fully cooked. Remove and let rest before slicing.
  2. In the same skillet, add chickpeas and sauté for 5 minutes until slightly crispy.
Cook Vegetables
  1. In the same skillet, add broccoli, carrots, and bell peppers. Sauté for 5-7 minutes until tender.
Assemble Meal Prep
  1. In storage containers, divide cooked grains, sliced chicken, sautéed chickpeas, and vegetables. Top with sliced avocado.
