Ingredients

  • 1 whole chicken (about 3-4 pounds)
  • 1/4 cup olive oil
  • 1/4 cup lime juice (freshly squeezed)
  • 4 cloves garlic (minced)
  • 2 tablespoons paprika
  • 1 tablespoon cumin
  • 1 tablespoon oregano (dried)
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon cayenne pepper (optional for heat)

Method

  1. Whisk together 1/4 cup olive oil, 1/4 cup freshly squeezed lime juice, and 4 minced cloves of garlic; add 2 tablespoons paprika, 1 tablespoon cumin, 1 tablespoon dried oregano, 1 teaspoon salt, 1 teaspoon black pepper, and optional 1 teaspoon cayenne pepper.
  2. Place your whole chicken in a roasting pan and pour the marinade all over it, covering it well; let it chill in the refrigerator for at least 2 hours, preferably overnight.
  3. Preheat your oven to 425°F (220°C).
  4. Remove the marinated chicken from the fridge and let it sit at room temperature for about 30 minutes.
  5. Slide the chicken into your preheated oven and roast for around 60 minutes until it reaches an internal temperature of 165°F (75°C).
  6. Let your pollo asado rest for about 10 minutes before carving.
