Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup granulated sugar
Wet Ingredients
  • 1 cup crushed pineapple drained
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease a loaf pan.
  2. In a mixing bowl, whisk together the dry ingredients: flour, baking soda, baking powder, salt, and sugar.
  3. In another bowl, combine the wet ingredients: crushed pineapple, vegetable oil, eggs, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  5. Pour the batter into the prepared loaf pan.
Baking
  1. Bake in the preheated oven for 60 minutes, or until a toothpick inserted into the center comes out clean.
  2. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
