Prepare Cream Cheese Layer
- In a mixing bowl, beat the softened cream cheese, granulated sugar, vanilla extract, and egg until smooth and creamy.
Prepare Pineapple Topping
- In a separate bowl, combine the drained crushed pineapple, brown sugar, and cornstarch. Mix well and set aside.
Make Cobbler Crust
- In another bowl, mix the flour, baking powder, and granulated sugar. Stir in the melted butter and milk until just combined.
Assemble and Bake
- Preheat the oven to 350°F (175°C). Spread the cream cheese mixture evenly in the bottom of a greased baking dish.
- Layer the pineapple mixture on top of the cream cheese layer.
- Pour the cobbler crust batter over the pineapple layer, spreading it evenly.
- Bake for 30 minutes or until the top is golden brown and a toothpick inserted comes out clean.
