Ingredients
  

Cream Cheese Layer
  • 8 oz cream cheese softened
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 large egg
Pineapple Topping
  • 1 can crushed pineapple drained
  • 1/4 cup brown sugar
  • 1 tbsp cornstarch
Cobbler Crust
  • 1 cup all-purpose flour
  • 1 tbsp baking powder
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter melted
  • 1/2 cup milk

Method
 

Prepare Cream Cheese Layer
  1. In a mixing bowl, beat the softened cream cheese, granulated sugar, vanilla extract, and egg until smooth and creamy.
Prepare Pineapple Topping
  1. In a separate bowl, combine the drained crushed pineapple, brown sugar, and cornstarch. Mix well and set aside.
Make Cobbler Crust
  1. In another bowl, mix the flour, baking powder, and granulated sugar. Stir in the melted butter and milk until just combined.
Assemble and Bake
  1. Preheat the oven to 350°F (175°C). Spread the cream cheese mixture evenly in the bottom of a greased baking dish.
  2. Layer the pineapple mixture on top of the cream cheese layer.
  3. Pour the cobbler crust batter over the pineapple layer, spreading it evenly.
  4. Bake for 30 minutes or until the top is golden brown and a toothpick inserted comes out clean.
