Ingredients
  

Eggs
  • 6 large eggs hard-boiled
Filling
  • 1 medium ripe avocado mashed
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon pickled beet juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
Garnish
  • 1/2 cup pickled beets diced
  • 2 tablespoons fresh chives chopped

Method
 

Prepare the Eggs
  1. Place the eggs in a pot and cover with water. Bring to a boil, then cover and remove from heat. Let sit for 10 minutes.
  2. Transfer the eggs to an ice bath to cool for 5 minutes, then peel and slice in half.
Make the Filling
  1. In a mixing bowl, combine the mashed avocado, mayonnaise, Dijon mustard, pickled beet juice, salt, and black pepper. Mix until smooth.
  2. Scoop the yolks from the egg halves and add to the avocado mixture. Mix until well combined.
Assemble the Deviled Eggs
  1. Spoon or pipe the avocado filling back into the egg whites.
  2. Top each deviled egg with diced pickled beets and a sprinkle of chopped chives.
