Ingredients
  

  • 1 lb pizza dough
  • 1 cup basil pesto
  • 8 oz fresh mozzarella cheese torn into pieces
  • 1 cup cherry tomatoes halved
  • ¼ cup pine nuts toasted
  • Fresh basil leaves for garnish

Method
 

  1. Preheat oven to 475°F (245°C). Allow store-bought dough to sit at room temperature for 30 minutes.
  2. Roll out the dough on a floured surface and transfer to a baking sheet or pizza stone.
  3. Spread the basil pesto evenly over the dough.
  4. Scatter mozzarella pieces and halved cherry tomatoes on top.
  5. In a small pan over medium heat, toast pine nuts until golden brown (about 3 minutes).
  6. Sprinkle toasted pine nuts over the pizza before baking.
  7. Bake for 12-15 minutes or until the crust is golden brown and cheese is bubbly.
  8. Garnish with fresh basil leaves and serve hot.
