  • 1 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 2 large eggs room temperature
  • ½ cup unsalted butter melted
  • 1 cup semi-sweet chocolate chips
  • 1 tsp peppermint extract
  • ½ cup crushed candy canes for topping

Method
 

  1. Preheat your oven to 350°F (175°C) and grease a 9x9-inch baking dish.
  2. In a large bowl, whisk together the flour, cocoa powder, sugar, and baking powder until well combined.
  3. Melt the butter in a saucepan over medium heat; let it cool slightly before adding it to the egg mixture.
  4. In another bowl, beat eggs with peppermint extract until frothy, then stir in melted butter.
  5. Combine wet and dry ingredients gently until just mixed; fold in chocolate chips.
  6. Spread the mixture evenly into the prepared baking dish and bake for 20-25 minutes until set but still soft in the center.
  7. Cool before slicing into squares, then top with crushed candy canes while warm.
