Ingredients
  

  • 1 cup semi-sweet chocolate chips
  • 1/2 cup creamy natural peanut butter
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract

Method
 

  1. Melt 2/3 of the chocolate chips in a microwave-safe bowl or double boiler until smooth.
  2. Line a muffin tin with mini cupcake liners and pour melted chocolate into each, coating the bottom and sides evenly.
  3. In a separate bowl, mix peanut butter, powdered sugar, and vanilla until smooth and creamy.
  4. Spoon a teaspoon of the peanut butter mixture into each chocolate-lined cup and top with the remaining melted chocolate.
  5. Refrigerate for at least one hour until firm, then serve chilled and enjoy!
