Ingredients
  

  • 3 medium ripe peaches diced
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • ½ cup granulated sugar
  • ½ cup unsalted butter cold and cubed
  • 2 large eggs room temperature
  • ¼ cup cinnamon sugar for topping

Method
 

  1. Preheat oven to 375°F (190°C) and lightly grease a muffin tin.
  2. Toss diced peaches with granulated sugar and cinnamon; set aside.
  3. In a bowl, whisk together flour, baking powder, and sugar. Cut in butter until crumbly. Add eggs and mix until just combined.
  4. Roll out dough into a rectangle, spread melted butter over it, sprinkle with cinnamon sugar, and layer peach mixture on one edge. Roll tightly and cut into pieces.
  5. Place pieces upright in the muffin tin and bake for 20-25 minutes until golden brown.
  6. Cool slightly before serving warm.
