  • 1 cup fresh peaches diced
  • 1 large egg
  • 1 tsp baking powder
  • 1 tsp vanilla extract

Method
 

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream together softened butter and granulated sugar until light and fluffy (about 3 minutes).
  3. Beat in the egg and vanilla extract until smooth.
  4. In a separate bowl, whisk together flour and baking powder. Gradually add this mixture to the wet ingredients until just combined.
  5. Gently fold in the diced peaches.
  6. Drop rounded spoonfuls onto prepared baking sheets about two inches apart. Bake for 12-15 minutes or until edges are lightly golden. Let cool on wire racks.
