Ingredients
  

  • 4 large egg whites
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar
  • 1 tablespoon cornstarch
  • 1 cup heavy cream
  • 2 cups fresh fruits e.g., strawberries, kiwis, blueberries

Method
 

  1. Preheat your oven to 250°F (120°C) and line a baking sheet with parchment paper.
  2. In a clean bowl, whip the egg whites until soft peaks form.
  3. Gradually add sugar while continuing to whip until stiff peaks form.
  4. Gently fold in the vanilla extract, vinegar, and cornstarch until well combined.
  5. Spoon or pipe the meringue onto the prepared baking sheet in your desired shape and create a slight well in the center.
  6. Bake for about 1 hour until crisp on the outside but soft inside. Allow to cool completely.
  7. Whip the heavy cream until fluffy and spread over the cooled pavlova; top generously with fresh fruits.
