Crust
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter softened
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
Topping
  • 8 oz cream cheese softened
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1 cup strawberries sliced
  • 1 cup blueberries
  • 1 cup raspberries

Method
 

Prepare the Crust
  1. Preheat the oven to 350°F (175°C). In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
  2. Add the egg and vanilla extract, mixing until well combined. In another bowl, whisk together the flour, baking powder, and salt.
  3. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  4. Spread the dough evenly onto a baking sheet to form a large cookie crust. Bake for 10-12 minutes or until lightly golden.
  5. Allow the crust to cool completely.
Prepare the Topping
  1. In a mixing bowl, beat the softened cream cheese with an electric mixer until smooth.
  2. Add the powdered sugar and vanilla extract, mixing until well combined.
  3. Spread the cream cheese mixture evenly over the cooled crust.
  4. Arrange the sliced strawberries, blueberries, and raspberries on top of the cream cheese layer in a patriotic pattern.
  5. Chill in the refrigerator for at least 30 minutes before serving.
