Ingredients
  

  • 1 lb large shrimp peeled and deveined
  • 1 cup panko breadcrumbs
  • 2 large eggs beaten
  • 1/2 cup all-purpose flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Lemon wedges for serving

Method
 

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Set up three shallow bowls: one with flour mixed with salt and pepper, another with beaten eggs, and the last with panko breadcrumbs.
  3. Dredge each shrimp first in the flour mixture, then dip into the egg wash, and coat in panko breadcrumbs.
  4. Place coated shrimp on the prepared baking sheet in a single layer. Bake for 12-15 minutes or until golden brown and crispy.
  5. Serve immediately with lemon wedges on the side.
