Delicious and easy oven-baked tacos filled with seasoned meat and topped with cheese and fresh ingredients.

Ingredients
  

Taco Filling
  • 1 lb Ground Beef or turkey
  • 1 packet Taco Seasoning or homemade
  • 2 cups Refried Beans
  • 1 cup Corn canned or frozen
  • 1 cup Shredded Cheese cheddar or Mexican blend
Taco Shells
  • 12 count Taco Shells hard or soft
Toppings
  • 1 cup Lettuce shredded
  • 1 cup Tomato diced
  • 1/2 cup Sour Cream
  • 1/4 cup Salsa

Method
 

Prepare the Filling
  1. Preheat the oven to 350°F (175°C).
  2. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  3. Add taco seasoning and follow package instructions, usually adding water and simmering for a few minutes.
  4. In a mixing bowl, combine the refried beans, corn, and cooked meat mixture.
Assemble the Tacos
  1. Place taco shells in a baking dish.
  2. Fill each shell with the meat and bean mixture, then top with shredded cheese.
Bake
  1. Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
Serve
  1. Remove from the oven and let cool slightly. Top with lettuce, tomato, sour cream, and salsa before serving.
