Ingredients
  

  • 1 whole chicken 4-5 pounds
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh rosemary chopped
  • 1 tablespoon fresh thyme chopped
  • 6 cloves garlic whole
  • 1 lemon cut in half
  • Salt and pepper to taste

Method
 

  1. Preheat your oven to 425°F (220°C).
  2. Rinse the chicken under cold water and pat dry with paper towels. Remove giblets if present.
  3. Drizzle olive oil over the chicken, rubbing it in thoroughly. Season generously with salt and pepper inside and out.
  4. Place garlic cloves and herbs inside the cavity. Squeeze lemon juice over the chicken and place lemon halves inside as well.
  5. Roast in the preheated oven for approximately 1 hour and 15 minutes or until the internal temperature reaches 165°F (74°C).
  6. Let rest for 10-15 minutes before carving.
