  • 3-4 boneless skinless chicken breasts
  • 8 oz fresh mushrooms button or cremini
  • 1 cup heavy cream or half-and-half
  • 3 garlic cloves minced
  • 1 cup low-sodium chicken broth
  • 2 tbsp low-sodium soy sauce
  • Olive oil salt, and pepper

Method
 

  1. Wash and slice the mushrooms; mince the garlic. Cut chicken into bite-sized pieces.
  2. In a large skillet over medium-high heat, heat olive oil. Add chicken; season with salt and pepper; cook until golden brown (5-7 minutes). Remove from skillet.
  3. In the same skillet, add more olive oil if needed; sauté mushrooms until browned (about 5 minutes). Add garlic during the last minute.
  4. Pour in cream, chicken broth, and soy sauce; bring to a gentle simmer.
  5. Return chicken to the skillet; stir to combine and heat through (3-5 minutes).
