Ingredients
  

  • 1 cup brown lentils
  • 1 cup basmati rice
  • 2 large onions
  • 4 tablespoons olive oil
  • 1 teaspoon cumin powder
  • Salt to taste

Method
 

  1. Rinse lentils under cold water until the water runs clear. In a pot, combine rinsed lentils with three cups of water; bring to a boil and then simmer for about 20 minutes until tender.
  2. Rinse rice under cold water. In another pot, bring two cups of water to a boil; add rinsed rice and salt.
  3. Once lentils are cooked, drain any excess water if needed and mix with boiling rice.
  4. Cover the pot tightly and simmer on low heat for 15-20 minutes until all liquid is absorbed.
  5. In a skillet, heat olive oil over medium heat; sauté sliced onions until golden brown (about 15-20 minutes). Serve Mujadara topped with caramelized onions.
