Ingredients
  

  • 10 oz spaghetti
  • 2 cups cooked chicken breast, chopped
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup chopped bell peppers (mixed colors)
  • 1/2 small onion, chopped
  • 2 cloves garlic, minced
  • 3/4 cup heavy cream
  • 1/2 cup chicken broth
  • 1 tbsp olive oil
  • 1 tbsp butter
  • Salt and pepper to taste
  • Fresh parsley for garnish

Method
 

  1. Boil spaghetti until al dente. Drain and reserve 1/2 cup pasta water.
  2. Sauté onions and bell peppers in olive oil and butter until soft. Add garlic and cook 1 minute.
  3. Add heavy cream and chicken broth. Simmer for 3–4 minutes.
  4. Stir in Monterey Jack cheese until melted and creamy.
  5. Add cooked chicken and heat through. Season with salt and pepper.
  6. Toss in the cooked spaghetti and coat in sauce. Add pasta water if needed.
  7. Serve warm with fresh parsley and cracked pepper on top.
