Ingredients
  

  • 2 cups fresh peaches chopped
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • 2 large eggs
  • 1 cup whole milk
  • ½ cup melted butter
  • ½ cup brown sugar
  • ½ cup rolled oats
  • 1 tsp cinnamon
  • ½ cup cold butter cubed

Method
 

  1. Preheat oven to 350°F (175°C) and grease a muffin tin.
  2. Chop fresh peaches and set aside.
  3. In a bowl, whisk together flour, sugar, baking powder, and salt.
  4. In another bowl, mix melted butter, eggs, milk, and vanilla; combine with dry ingredients until just mixed.
  5. Gently fold in chopped peaches.
  6. Prepare crumble by mixing brown sugar, oats, cinnamon, and cold butter until crumbly.
  7. Fill muffin cups two-thirds full with batter; top generously with crumble.
  8. Bake for 18-22 minutes or until golden brown; cool slightly before serving.
