Berries
  • 1 cup fresh strawberries hulled and quartered
  • 1 cup fresh blueberries
  • 1 cup fresh raspberries
  • 1/4 cup granulated sugar adjust based on sweetness preference
  • 1 tablespoon lemon juice freshly squeezed
  • 1/2 teaspoon vanilla extract

Method
 

Cooking the Compote
  1. In a medium saucepan, combine the strawberries, blueberries, raspberries, sugar, lemon juice, and vanilla extract.
  2. Cook over medium heat, stirring occasionally, until the berries begin to release their juices and the mixture starts to bubble, about 10 minutes.
  3. Reduce heat to low and simmer for an additional 5 minutes, allowing the compote to thicken slightly.
  4. Remove from heat and let cool slightly before serving.
